yummy pumpkin bread

i spent last saturday morning at the farmer's market with a sweet friend, grabbed some coffee at the local coffee house, came back & super cleaned my house, & then made this yummy, yummy pumpkin bread.

(please pardon the quality of my pictures.  i dropped the touch screen camera, that i just HAD to have, a while back & the touch screen is totally mucked up & i think it's stuck on video!  the literal "downfall" to being clumsy.  so when i'm not borrowing the parents' camera, i'm left with my iphone.  so if anyone wants to donate a camera, feel free :)




pumpkin bread
  • 3 1/3 cups all purpose flour
  • 3 cups sugar
  • 2 tsp baking soda
  • 1 1/2 tsp ground cinnamon
  • 1 1/2 tsp salt
  • 1 tsp nutmeg (didn't have this so i substituted with pumpkin pie spice)
  • 2/3 cup water
  • 1 cup vegetable oil
  • 4 eggs
  • 1 (15 oz) can pumpkin
mix everything, but the flour together.
add flour gradually to mixture.

pour into 3 greased 9 x 5 loaf pans.
bake at 350 for 50 mins to an hour

(you can also dust the pan with a cinnamon/sugar mixture after greasing
 to give the crust extra sweetness.)

pardon the half eaten loaf... it's THAT good.
