{taco.soup :: a.winter.favorite}

this is one of my all time favorite crockpot recipes 
and is super yummy for anytime during the winter!
taco soup
1 lb. ground turkey or beef, browned and drained
1 medium onion, chopped
2 (15oz) cans kidney beans
2 (15oz) cans pinto beans
2 (15oz) cans corn with their juices
1 (28oz) can diced tomatoes with their juices
1 (14oz) can tomatoes with chilies (rotel), with their juices
1 packet taco seasoning
1 packet ranch dressing mix
sour cream and cheddar, for garnish

the directions
use at least a 6-quart slow cooker. put the browned meat (i used turkey) and onion into the slow cooker. 

drain and rinse beans, and add to the cooker. 

add the corn and tomatoes. 

stir in contents of the seasoning packets. 

cover and cook on low for 8 hours, or on high for 4 hours. ladle into bowls. 

add a handful of cheddar cheese and a dollop of sour cream to each bowl before eating.

{breakfast.on.beech.mountain :: bacon, egg, & toast cups}

i'm blaming the insane heat in NC for the amount of time i've been leaving charlotte to spend time on beech mountain.  this summer is H-O-T!!  but seriously... how can you resist coming here...
yesterday morning i set out to pull a little paula dean, or better crocker, or more appropriately... martha stewart... and made the family a killer breakfast!  i give you my version of bacon, egg, and toast cups via martha stewart <--- click that link for the recipe.
here's what you'll need + butter.  take an easy start with 6 or 12 pieces of bread, depending on how many you want to make or how big your muffin pan is.  if you have a 12 muffin pan and only want to make 6, make sure you leave a space between the cups.
 once you have bread out, lightly roll out your slices.  then take a wide mouth glass, cup, or circular cookie cutter, and cut circles in your bread.  my big ol' starbucks mug worked fantastic!
once you have all your circles cut, butter your pan...
then 1/2 your bread circles before placing them in your pan.  place one 1/2 of your slice in the pan lining one side and then the other 1/2 so it lines the other side  your pieces will  overlap some.  use some of the extra bread pieces that you cut off to fill in the holes in the bottom.  melt a little butter and then brush the melted butter over the bread cups.
then cook your bacon about 3/4s of the way.  before it cools, circle the cups with the bacon slices.  the recipe didn't call for it, but i added shredded cheese to the bottom of my cups before the bacon.  everything is better with cheese right??
 once you have your bread, cheese, and bacon in your cups comes the fun part.  carefully crack an egg in each cup.  then lightly salt and pepper the tops.
then throw them in your 375 oven for 20-25 minutes.  feel free to take goofy pictures of the monkeys that are waiting to eat said food.

 ...and voila!  you have a yummy, yummy breakfast!  just don't get too carried away taking pictures that you slightly over cook them.  thankfully i had some hungry tummies to feed and they didn't mind at all!

oh spaghetti squash, how i love thee!

e and i decided to try something new last night for dinner.
introducing the spaghetti squash!

yes i heart you too... lots :)
wait... i got distracted, we aren't talking about you...

back to the spaghetti squash...
ok so here's the deal.  buy one of these babies at your local grocery.
heat the oven to 375.  find the biggest, sharpest knife you own.
get out the elbow grease & cut this bad boy in half from the tippy top
to the bottom.  notice i said elbow grease... i'm not kidding.  this sucker
is TOUGH.  i finally got it in half with all my fingers still intact.

now scoop out the seeds & throw both halves, rind up, 
in a pan or pirex dish.  bake for 1 hour & voila!

you have "spaghetti" squash.  get it?

now cover with some yummy spaghetti sauce, chicken, & a little parmesan
cheese and you have a superbly yummy dinner dish WITHOUT the pasta.


there are plenty of recipes & ways you can cook it, including in the microwave,
but the microwave totally freaks me out, so i'll opt for baking or crockpotting.
this super yummy, super good for you food is a great substitute for your pasta.

taco soup

truth tuesday... & turkey chili

random, i know, but i'm in a total funk this week... ok, scratch that... i've been in a weird funk i can't get out of for about 3 weeks now. it's not like an "i'm pissed off at the world" kinda funk, but more of a fog that is lingering that i just can't seem to find my way out of.

i know, i know... this is my happy place and the truth is no fun, but honestly i have no idea what's going on with me & i just needed to throw that out there. i'm not even able to find my normal blog inspiration! eeeeeeeeekkkkk! i'm going to blame it on the sugar i've started eating again :)

it does NOT help that it has been cold & rainy here yesterday & today. i know we need the rain here in NC, but it is definitely not assisting in brightening my mood. so in an effort to lighten my spirits last night & enjoy the weather as it is, i made TURKEY CHILI.. and it was YUMTASTIC!!
e even said it was super yummy! i found this great website, simplyrecipes.com , yesterday while googling "turkey chili" & i'm very impressed. this recipe was a good one.

yummy, quick & easy tuna salad

so with the way i've been eating the last few weeks,
i've had to be really creative with my recipes.
i've created this yummy, quick, & easy tuna salad that i love!
and the great thing is, you can use as much of each
ingredient to your liking, & it's really good for you!

YUMMY, QUICK, & EASY TUNA SALAD
-1 small can of light tuna in water
-2 hard boiled eggs
-1/4 of an avocado
-small amount of onion
-dill
-mrs dash's chili lime seasoning

chop all ingredients as finely as you like
& then mix all the ingredients together & voila...
you have yummy, quick, & easy tuna salad!

okay so i've done some drooling over this recently...

how amazing does that look?!?!?

i saw this over at my baking addiction & sooo want to make it & eat it.... possibly the whole thing : ) i think i could get into a lot of trouble with myself if this were in my house & my gym attendance would have to DOUBLE.

i gave up sweets for lent this year & i've done REALLY well,

but i am soooo ready for a big slice of THIS!!

i'm thinking i'm going to make it for easter sunday.

family -- does anyone have any complaints with that? no?? didn't think so.

Oreo Truffles
  • 1 package oreo cookies (divided… use cookie including the cream center)
  • 1 8oz. package cream cheese (softened)
  • white chocolate bark

1. Finely crush 7 cookies in a food processor or place them in a ziploc bag and crush into a fine consistency. Reserve for later.

2. Crush remaining cookies and stir in softened cream cheese. Use the back of a large spoon to help mash the two together.

3. Roll the mixture into 1" balls and place on wax paper covered cookie sheet.

4. Melt chocolate as directed on the package and then dip balls into chocolate, tap off extra and set aside on wax paper covered cookie sheet to dry. You can sprinkle the tops with the 7 crushed cookies for decoration. (I usually eat mine before they make it to this stage.)

5. Once dry, refrigerate and enjoy!

Makes about 36 truffles.

Notes: I used a small cookie cutter to push the mixture through for the heart shaped truffles. Also, it helps to freeze the uncoated balls for a few minutes to keep the mixture from starting to fall apart in the melted chocolate. If this becomes a problem, dip them in the chocolate, let dry and then dip again. They are also good dipped in regular milk chocolate bark. And for an extra twist, use the mint oreo sandwich cookies.

yummy pumpkin bread

i spent last saturday morning at the farmer's market with a sweet friend, grabbed some coffee at the local coffee house, came back & super cleaned my house, & then made this yummy, yummy pumpkin bread.

welcome fall!!

(please pardon the quality of my pictures.  i dropped the touch screen camera, that i just HAD to have, a while back & the touch screen is totally mucked up & i think it's stuck on video!  the literal "downfall" to being clumsy.  so when i'm not borrowing the parents' camera, i'm left with my iphone.  so if anyone wants to donate a camera, feel free :)




pumpkin bread
  • 3 1/3 cups all purpose flour
  • 3 cups sugar
  • 2 tsp baking soda
  • 1 1/2 tsp ground cinnamon
  • 1 1/2 tsp salt
  • 1 tsp nutmeg (didn't have this so i substituted with pumpkin pie spice)
  • 2/3 cup water
  • 1 cup vegetable oil
  • 4 eggs
  • 1 (15 oz) can pumpkin
mix everything, but the flour together.
add flour gradually to mixture.

pour into 3 greased 9 x 5 loaf pans.
bake at 350 for 50 mins to an hour

(you can also dust the pan with a cinnamon/sugar mixture after greasing
 to give the crust extra sweetness.)

pardon the half eaten loaf... it's THAT good.

paper or plastic? -- how bout neither!


so if you're just joining me, i'm big on recycling (thanks to my wonderful mama's influence.) one great way that's been around for years, that seems to be catching on more recently with everyone "going green", is taking your own bags to the grocery store. more recently i've seen grocery stores such as harris teeter & trader joe's selling these types of bags.

this makes me happy.

the amount of plastic bags used a year by people is astronomical & they reak havoc on our environment (click here for some interesting & eye opening facts about plastic bags)

well of course the fashionable side of me fell in LOVE with these Baggu bags when i stumbled across them today at the simple finds blog
the bags folded up pictured above only measure 5 x 5 & weigh 2oz. how great would these be to just throw in the bottom of your purse & at the checkout just pull out your baggu -- unfold -- throw the pouch in the bottom of the Baggu -- & voila! -- you have beautiful groceries!!

i also love that they come in so many colors to choose from. they're also reasonably priced at 3 for $22. you can buy them by clicking here. can you imagine how many grocery bags this could save you a year?!? ... annnnnnd you'll look great doing it! not only would they be great for grocery shopping, but anywhere you would get a plastic bag. or how about when you are going on vacation, or just going to the gym? the reusable uses are endless!!

breakfast, storm clouds... & iphones

no they have nothing to do with each other really, but i don't feel like making 2 posts today & i took both of the pictures on here with my iphone. i'm definitely impressed with it's ability in the 2nd picture, but the 1st is kinda blurry. but the point of my post...

i love omelets! my roommate in college got me hooked on them when she would make omelets with grilled green peppers, onions, & mushrooms. yummmmmm! well recently in the mountains, my mom has introduced us to zucchini & squash omelets & let me be the one tell you that they are delish! here's how we make them...
  1. use a cheese grader and grade as much zucchini & squash as you would like in your omelet.
  2. use a small amount of cooking oil (my favorite is smart balance omega cooking oil) & saute your veggies to your liking.
  3. you can either use eggs or egg whites (i like egg whites) -- pour your eggs into you omelet pan & cook them until the top is still a little runny.
  4. add your veggies & cook a little longer on that side
  5. (optional) add feta cheese, cook a little longer, then flip!
  6. cook a little more & fold it in half & voila -- you have an omelet!

i'm sold!


i had my first trader joe's experience this past weekend & i'm completely sold! trader joe's recently opened up here in charlotte & i've been meaning to go, but have been out of town so much & so busy that i've just never made the time. my sister suggested it to me & told me it's a great place for a single person to do their grocery shopping. most things are sold in 1 or 2 servings & they have a lot of healthy choices. they have great prices & a wide variety of organic fruits, veggies, meats, & many other things. a few things that i purchased this week that were well worth my purchase!!


  • edamame, ready to eat

  • trader joe's garlic hummus (it's huge & much less expensive that harris teeter)

  • trader joe's crumbled feta cheese

  • already cooked & marinated balsalmic chicken breasts (2 pieces of chicken) It's been great for making wraps at lunch

  • nicely packaged -1 red & 1 green organic peppers & still less expensive than the HT

  • & i can't forget 2 buck chuck - $2 red or white wine. it's $2 wine... that's about all i can say : )

subaru river jam

last night my roommate carrie & i headed out to the whitewater center for the subaru river jam... here's my quick review.

  • loved it!
  • great music by the truckstop preachers
  • the blue moons were fantastic... as always!
  • the food at the river's edge bar & grill was amazing! we had hummus, i had the pimento cheese melt (made on site), & carrie had the black bean burger... it was all good!
  • fantastic view of people rafting, kayaking, & biking all night... made me ready to get in the water!

all in all it's a great way to spend your thursday nights from now through october.

CHARLOTTE, N.C. -- A renowned Charlotte chef and restaurateur plans to open a new place backed by top names. The venture is in good faith, but its never going to make money. And that's the point.

Jim Noble, the minister and chef behind the upscale Noble's and trendy Rooster's -- both in SouthPark -- plans to open a not-for-profit restaurant this winter in uptown Charlotte.

The King's Kitchen will employ, train and minister to troubled youth, graduates of rehabilitation programs and the unemployed. Noble also runs a nonprofit evangelical Christian organization and for years has fed the poor and held fundraisers at his restaurants.


Now, instead of giving a man a fish, he wants to teach him to fish. Or at least to serve it with a glass of sweet tea.

"My business and spiritual life go hand in hand," Noble says. "And one of the things I know is how to run a restaurant."

Noble plans to serve "local, healthy, comfort food at a medium price" at a to-be-determined location uptown beginning in the winter. "We'll have four or five meats and 10 or 15 vegetables," he says. Professional chefs will prepare the meals.


The King's Kitchen will serve "the best pan-fried chicken in the Southeast," says Noble, whose chicken dishes are a hallmark of Rooster's.

Noble foresees the place being open for lunch and dinner six or seven days a week.

You might not see much difference between the King's Kitchen and other down-home places. But the staff will include bus boys and waiters who might have recently been on the street, and the profits go to help the poor.

He says he needs $500,000- $600,000 to start the King's Kitchen. There is a similar restaurant in New Orleans called Café Reconcile, which Noble says helped serve as a model.

Charlotte's biggies are coming out to support the unusual venture: Honorary chairs include schools chief Peter Gorman and his wife, Sue. Panthers players and Coach John Fox are also helping out.

Cammie and Dee-Dee Harris, who have supported Charlotte charities with the fortune they made in Bojangles' and other fast-food franchises, are squarely behind Noble's effort.

"It's just the right thing to do," says Cammie Harris. "Jim is not your normal restaurateur. He's trying to help the people least fortunate in our city, and we want to help him."

Noble says giving the less fortunate a place to work will give them hope.

"Sometimes these folks have reached a place where God is all they've got," he says. There will be one key difference from many restaurants he says. "We won't serve alcohol."

just call me betty crocker

well this weekend was a busy one. i spent saturday afternoon & evening preparing for our mother's day / birthday festivities. this mother's day/birthday celebration day (my uncle craig, maw maw simpson (yes... mawmaw. it's southern!), and my brother in law all have recent birthday's very close to each other as well as mother's day. it's a lot to celebrate!!) ... back to my point... this family celebration, i was asked to make a cake to celebrate everything. i decided on making one of our family's favorite cakes, the 4 layer peanut butter chocolate cake. i was thrilled when my mother asked me to make a cake, because usually everyone else has already been assigned something to bring every year and finally it was my turn to contribute! i was set on this cake! it was my first attempt at this cake, but i have to say, it turned out quite nice!! here's a picture, mid cake making & one of the final product. i've included the recipe as well for you to enjoy! my only suggestion is to double the icing!!



Peanut Chocolate Cake

1/2 cup butter, softened
2 1/4 cups packed brown sugar
3 eggs
3 squares (1 oz each) unsweetened chocolate, melted & cooled
2 teaspoons vanilla extract
2 1/4 cups all purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1 cup (8oz) sour cream
1 cup water

Frosting
1 cup butter
1 cup jif peanut butter
4 cups confectioners sugar
1/4 cup milk
2 teaspoons vanilla extract
1 cup finely chopped peanuts

In a large mixing bowl, combine butter and brown sugar; beat in eggs, chocolate & vanilla. combine the flour, baking soda & salt; add to creamed mixture alternately with the sour cream.

gradually beat in water. pour into 2 greased & floured 9 inch round baking pans. bake at 350 for 35-40 minutes or until a toothpick inserted near the center comes out clean. cool for 10 minutes before removing from pans to wire racks to cool completely.

for frosting, cream the butter, peanut butter, confectioners sugar, milk & vanilla in a mixing bowl until smooth; set aside. split each cake into 2 layers. place a bottom layer on a serving plate; spread with about 1/2 cup frosting.

repeat layers twice. top with the remaining cake. frost top & sides of cake. gently press peanuts into sides of cake or how you would liek to decorate.
